Have you ever been invited to a potluck dinner? Chances are that you were too busy to spend much time cooking. Here's a simple, fast dish that will meet most people's dietary requirements. It's gotten rave reviews at every potluck it's been served and it's dairy-free and vegan.
INGREDIENTS:
Three 1 lb. boxes of potato gnocchi (Found in the pasta section.)
One standard sized jar of good pasta sauce (choose one without too much sugar)
One small jar of sliced mushrooms
Pinch of salt
You'll also need a pot that can hold at least 4 quarts of water and a container with a lid that holds at least 11 cups (2.6 liters).
Add approximately 4 quarts of water to the pot, plus a pinch of salt. Set the burner on high and wait for the water to come to a full boil. In the meantime, pour the sauce into the container. Drain the mushroom slices and add them, too. Open the boxes of gnocchi and cut open the plastic bags so that they'll be ready when you need them.
Once the water is boiling, add one bag of gnocchi. Wait 1-2 minutes until you see all the gnocchi rising up to the surface. Use a fork to take one out, run it under cold water and test it. It should have a texture almost like cheesecake, with no trace of starchy flavor. Even if the gnocchi need a little more time, it will be less than 15 seconds.
Use a perforated spoon or spatula to scoop out the gnocchi and put them into the container. Put the lid on the container to keep the heat in. This will also heat up the sauce and mushrooms, saving you cooking time. Add the next bag of gnocchi to the pot and repeat until all the bags are used up. Thoroughly mix the gnocchi, sauce and mushrooms together.
You're done! To keep the container from opening in the car, wrap masking tape all the way around its middle. You may also want to use the tape to create a label that says 'Potato Gnocchi' (pronounced "NYOE-kee") and to secure a serving utensil to the lid. In mild temperatures, the dish should stay hot for at least 2 hours.
